■ CHRISTMAS CABBAGE SOUP
   −VIANOCNA KAPUSTNICA 
■ ROASTED FISH-PECENA RYBA
   
  Sour cabbage 500g
Water 1300cc
Onion 40g
Butter 50g
Paprika powder a little
Dried mushrooms 10g
Garlic a little
Bay leaf, pepper, salt a little
Potato 100g
Smoked ham or sausage as much as you like
Sour cream for option

Put sour cabbage, dried mushroom, smoked ham and water into one pot and leave it to boil. Fry sliced onion on butter in a separate pot. Add paprika powder until the onion’s color is nice red and add it to the cabbage pot. Boil until ham and cabbage is tender enough. Cut potato into small cubes and add it to the pot and boil together until potato is tender. Adjust the taste with salt, garlic, pepper and vinegar(option). Take the ham out and cut it into the same size as the potato. Put it back to the pot. Sour cream can be added individually.
Brush a cleaned fish with butter, salt, and pepper. Add crushed garlic for better taste and roast it in a preheated oven.
■ ROASTED DUCK(GOOSE)−PECENA KACICA(HUS) ■ STEWED CABBAGE-DUSENA KAPUSTA
   
Roast the duck at a very strong flame, brush it with butter properly. Later, make the flame lower and brush it with the oil that comes out from the duck in the process of roasting. Season it with salt, pepper.   Red cabbage 500-600g

Salt, cumin, sugar a little
Wine 500cc

Sour cream
Slice the cabbage. Fry onion on oil, add cabbage. Sprinkle with salt, cumin, sugar and stew in a covered pot. When the cabbage is tender, add wine and grated apples. Add sour cream to make it softer. Stewed red cabbage goes perfectly with roasted duck.
■ POTATO SALAD-ZEMIAKOVY SALAT ■ THIN POTATO PANCAKE-LOKSA
   
Potato 750g
Ham(sliced) 200g
Onion 1 piece
Pickles 2 pieces
Hard egg 2 pieces
Salt, black pepper, mayonnaise a little
Boil unpealed potato, cool it and peal it. Cut it into small 2x2cm cubes.
Add sliced ham, onion, pickles, hard eggs, (all items should be cut into the same size)Add salt, pepper and mix it carefully. Add mayonnaise, mix again and leave it to chill for some hours.
Potato 500g
Flour 300g
Salt 2 Table spoon
Boil unpealed potato, cool it and peal it. Grade it and mix with flour and salt. Work a dough, roll it and cut out into small pieces. Each piece of the dough should be rolled and fried with just a drop of oil on hot pan or an oven directly.
■CHRISTMAS FRUIT CAKE-VIANOCNY OVOCNY KOLAC ■ SUHAJDY
   
Egg 3 pieces
Powder sugar 150g
Boiling water 6 Table spoon
Flour 150g
Baking powder 4g
Seasonal fresh fruit some
Gelatin some for covering
Mix yolks and sugar together. Add boiling water while mixing. After “bubbles” start to appear, add well-mixed egg whites and mix more. Finally, add flour and baking powder. Place the dough into a cake baking sheet and bake in a preheated oven for 30 minutes by 180?C. After cooling down, start with decoration. Use any kind of fresh fruit and decorate the cake up to your taste.
Prepare gelatin according to the instruction on a box and cover the arranged cake and fruit with it. Put into a refrigerator for cooling.
Grated walnuts 200g
Milk 150cc
Sugar 150g
Lemon rind
Cinnamon sugar
Cooking chocolate
Add grated walnuts into boiling milk and sugar, mix well. Add grated lemon rind and cinnamon sugar. Mix well and let it cool down. Spoon this mixture into separate paper cups, bout 1/3 full. Meanwhile, melt chocolate and fill each cup with it. Decorate the top up to your taste.
■ COCONUT CYLINDER-KOKOSOVY VALCEK ■ NUTS ROLL-ORECHOVNIK 
   
Grated coconut 200g
Powder sugar 200g
Cocoa 30g
Egg white 1 piece
Baking butter 150g
Brandy 3 Table spoon
Bread crumbs 3 Table spoon
Take half portion of coconut, powder sugar, baking powder, brandy, bread crumbs whipped egg white and mix well together. Add cocoa to the other ;half and mix well too. Sprinkle foil with powder sugar and spread the cocoa part on it, about 0.5cmthick. Top the cocoa part with the white part and spread it again. Roll the twoparts into a cylinder shape. Leave to cool well for overnight and cut it next day.

Vanilla sugar 10g
Grated nuts, raisins as much as you like
Pie sheet
Yolk 1 piece
Cook milk, sugar and vanilla sugar until boiling. Add nuts and raisins.
Cool it. Spread the mixture on a rolled pie sheet and wrap properly. Brush with yolk and bake in a preheated oven until gold brown.
■ SALTY STICKS-SLANE TYCINKY ■ HONEY BREAD-MEDOVNIKY
   
Flour 300g
Baking butter 250g
Water 14 Table spoon
Salt a little
Egg 1 piece
Work flour, butter, water, salt together until the dough is smooth enough to roll it for 0.5cm thick. Spread the dough with egg and cut into stripes. You can sprinkle the stripes with paprika, cheese or cumin if you wish. Place on a baking sheet and bake until golden brown.

Baking butter 50g
Honey 150g
Baking soda 2 Tea spoon
Milk 4-5 Table spoon
Ginger powder 1 Table spoon
Work flour, sugar, heated honey and butter, baking soda, ginger and milk well together and place it into a refrigerator for overnight. Next day, roll the dough for 0. 5cm thick and cut different shapes out. Spread the cut out shapes with an egg and bake until golden brown.
■ VANILLA CHRISTMAS TREE -VANILKOVY VIANOCNY STROMCEK  
   
Baking butter 50g

Flour 125g
Egg 3 pieces
Whipped cream 2 cups
Fruit some for decoration
Vanilla essence a little
Sugar 2 Table spoon
Grated nuts a little
Cooking chocolate a little
Boil butter, 250cc water and salt. Add flour and stir until a film forms on thebottom of the pan. Remove from the heat and beat eggs (one by one) into the pasteand mix until the mixture is soft and shiny. Fill a piping bag with the mixture. Cover the baking sheet with baking paper and pipe small puffs spaced apart. Brush the pastries and cut the tops of them with a sharp knife.
Fill each pastry with a shipped cream and top it with the cap. Arrange a tree on a plate, decorate it with fruits, grated nuts and chocolate.

Flour 850g
Baking powder 2 Table spoon
Salt 1 Table spoon
Sugar 100g
Butter 100g
Yeast 40g
Milk 500cc
raisin, crushed nuts, cinnamon, vanilla sugar as much as you like

Yolk 1 piece
Mix yeast and a little of milk together and leave it to rise. Add melted butter, flour, baking powder, salt, sugar and rest of milk and work a dough. Leave the dough to rise on a warm place. Divide it into two parts. Each of the parts should be rolled, sprinkled with cinnamon, vanilla sugar, raisins, crushed nuts.
Brush it with melted butter. Wrap each part up and cut 1cm thick pieces out. Place them on a buttered baking sheet, leave to rise again, brush them with a yolk and bake them in a preheated oven.

Apple 1 kg

Oil and sugar a little
Whipped cream, chocolate, grated nuts optional Dough:Mix 260g sugar with 4 yolks until foamy. Add oil, water, flour, baking powder and well mixed egg whites. Cover the bottom of a baking pan with oil and sugar. Arrange small pieces of apples on it and prebake in the oven for 15 minutes. Later, cover the apples with the dough and bake for another 20-25 minutes. Cool it. For decoration, whipped cream, chocolate and nuts can be used.

Tea (English, Russian OK) 500cc
Sugar 200g
White wine 500cc
Orange and lemon rind
Brandy 200cc
Mix all the ingredients. Boil the tea. Combine them and serve it hot.
